Can I delete the pre-programmed schedules that came with my kiln?

Steps for deleting schedules on the TAP II, TAP II Pro, and original TAP Controller can be found below...

Yes, for the TAP II and TAP II Pro Controllers, press Start to access your schedules. Select the schedule you want to delete and press Delete Schedule. Then confirm on the pop-up notification that you want to delete the schedule. 

To delete a schedule on the original TAP Controller, navigate to Menu>Schedules then select the schedule you want to delete and press Delete Schedule.  

However, please note: Once you delete a schedule you will not be able to get it back.
